To Die For Deer Enchiladas

The wait is over! I’m so excited to share these with you! My husband loves these, and I don’t know how many times I’ve heard him tell someone about “the enchiladas my wife made.” They’ve been a huge hit here in the Frakes Home, and I can’t wait to hear how they turn out for you and your family! I’ve made them with both red sauce, and green sauce, and it’s great both ways. Cody prefers the red, while I lean towards the green sauce.

As an added bonus with these, they make a GREAT freezer meal for busy week nights. So if you’re a household of 2 like us, make the full batch and pop half in a pan for later and freeze! Big family? Just make an extra batch while you’re going! 🙂 Viola!

We’re going to be doing lots veggie chopping a dicing with my recipes, so to make your life easier, I would suggest getting a Vidalia Chop Wizard! It’s in my top 3 kitchen tools, second only to my Kitchenaid Mixer! I’ve been using this for years, and they are a boss for everything! I’m not a math wiz, but it probably saves me 90% of my time while chopping and cubing veggies and such. And, if you’re slightly OCD like me, it makes all your veggies uniform. Perfect. Little. Cubes. Its really amazing! It comes with 2 different sizes, so you can chop fine little pieces or bigger chunks. My MIL used mine for prepping the potato bar for my SIL’s wedding, and I think I made a believer out of her too! Ok, onto the food! Here is the recipe!

1.5 pounds of ground deer (or beef)  4-6 servings

1 red pepper

1 med. onion

1 chipotle pepper

2 tbsp chipotle pepper sauce

4 oz. Verde sauce

28 oz. can of enchilada sauce

2 tbsp. chopped cilantro

2 tbsp. olive oil

1 1/2 tsp. minced garlic

1 tbsp. chili powder

1 tbsp. cumin

1/2 tsp. salt

sprinkle of pepper

3 cups shredded mixed cheese

1/2 cup cotija cheese (grated)

flour tortillas

Preheat that oven to 400 degrees & grease a baking dish! Chop & saute your onion, peppers, cilantro, & garlic with oil over med. heat. Add your ground deer, and throw in your seasonings, along with the chipotle sauce we saved from our can of chipotle peppers. Brown your deer (about 5 minutes.) Add verde sauce, and 12 oz. of enchilada sauce (save the rest to top your enchiladas!) Take your pan off the heat and add 1 and a half cups of your mixed cheese & cotija cheese. Once its melted and evenly mixed, you’re ready to build your enchiladas. Fill the tortillas and place in your greased dish seam side down. Pour the remaining enchilada sauce over the top, and sprinkle the additional cheese over the enchiladas. Bake for about 25 minutes. You’re cheese will start to look nice and bubbly, with a little bit of nice browning.

Top with sour cream, black olives, tomato, cilantro….whatever your heart desires! 😀
